Buckwheat Noodles made from Seaweed

Hegi-soba is a specialty noodle dish in Niigata, similar to zaru-soba. The dish is called hegi-soba because the wooden square receptacle used to hold the noodles are called Hegi. Rather than the traditional ingredients, the noodles used in hegi-soba are made from seaweed called funori. the funori gives the soba a smooth, firm texture (similar to Al Dente style) that's easy to slurp. While served on the hegi, the noodles are split into individual mouthfuls. This makes it easier to dip the noodles into the broth to soak up the flavors. Interestingly, while soba is typically served with wasabi, hegi-soba is served with Japanese spicy mustard (Karashi) instead. While there are many places to enjoy soba in Japan, stopping in Niigata for authentic hegi-soba is an experience in it's own. The region is so proud of hegi-soba, there are soba-tours and information available on where to get the best noodles.
