Italian yakisoba is a special variant of the popular yakisoba dish in Niigata. Yakisoba is a local dish in Japan that literally means fried noodles, and is made with meats, vegetables, bonito flakes, seaweed, and a thick, sweetish sauce (okonomiyaki sauce). The dish came to be when an Italian owner of a Japanese restaurant visited Japan. While there, he came up with the idea to combined Italian-style meat sauce with Japanese Yakisoba to create a new flavor. Italian Yakisoba has been enjoyed in Niigata since 1959 and can be found in many restaurants in the prefecture.
