Kanto-style Okonomiyaki

Many people have heard of the Hiroshima and Osaka specialty Okonomiyaki, but in Tokyo and the rest of Kanto, they make their own special version: Monjayaki. Monjayaki is similar to okonomiyaki, except it is made with additional dashi (soup stock) or water, thus making a more runny dish than usual. Monjayaki is said to have originated in Tokyo, and is almost identical to Okonomiyaki apart from the texture. It isn't uncommon to visit an okonomiyaki restaurant in Tokyo to find they also serve Monjayaki!
