Osaka Style Okonomiyaki

Okonomiyaki is a savory Japanese pancake consisting of batter made from flour and eggs, cabbage, and other ingredients depending on the okonomiyaki. Common ingredients are octopus, shrimp, pork belly, cheese, etc. It can include almost anything, for the "okonomi" in its name means "to one's liking".

Okonomiyaki is especially popular in Hiroshima and Osaka. They offer two variations, and Osaka's kansai style okonomiyaki is more available throughout Japan. The kansai style okonomiyaki mixes all the ingredients and batter together and then cooks the mixture into a pancake shape on a griddle.

In the Hiroshima style, the batter is cooked into a thin crepe and the ingredients are cooked separately rather than mixed together. The cooked ingredients are then placed onto the crepe and served over yakisoba noodles. Okonomiyaki can be enjoyed at okonomiyaki restaurants in Japan but the various types of okonomiyaki like the Hiroshima style is more so specific to the Hiroshima region.
