Soki Soba are Okinawa noodles served with soki, boneless pork ribs. Though the dish is called soba, the wheat noodles look much more similar to udon noodles. The soki soba soup is generally a konbu broth or katsuobushi broth. Pork bones are also simmered with the broth to give the soup a rich flavor. The boiled Okinawa noodles are served with soki (boneless pork ribs), kamaboko (fish cakes), green onion, and pickled ginger in the soup.
