Goya Chanpuru is a bitter melon stir fry, a specialty of the Okinawa islands. Goya is bittermelon and chanpuru refers to something mixed in the Okinawan language. The goya is stir fried with egg, tofu, and protein, typically spam. Vegetables play a large roll in Okinawan cuisine, so the dish is more focused on the goya than the proteins. Spam is also a commonly enjoyed protein in the Okinawan diet. While not everyone can enjoy the dish at first, goya chanpuru is a signature local dish of Okinawa.
